Fondue – a tradition of food for sharing

The term fondue comes from the French and means ‘melted’. Unsurprisingly, this refers to the molten cheese in the original form of fondue which originates in Switzerland – although Savoy and Piedmont also claim it as their own – where it has been the national dish since the 1950s. The savoury favourite was even included in the Swiss army’s cookbook. The oldest known recipe for cheese fondue dates back to 1699.

Also part of the tradition: lose a piece of bread, meat or other item of food in the pot, and it’s your turn to buy a round – so watch out!

A new fondue experience

At the start of your fondue night we’ll welcome you at reception with hot mulled wine, an Alpine aperitif or non-alcoholic punch before accompanying you to the barn in the Jagdhof’s garden. Unless you’ve ordered a chocolate fondue, a hearty Stadel platter of cold delights supplied by our favourite butcher and the Stubai dairy will already be waiting for you. In addition, you enjoy a soup, a large bowl of mixed salad and – last but not least – the dessert of the day.

Cheese fondue

  • Local Alpine cheeses
  • Cubed bread
  • Chopped herbs, mixed pickles, gherkins, pickled silverskin onions, boiled potatoes, garlic, pineapple, grapes, Speck or venison ham

  • Kirsch on request – extra charge

Tasty tip:
a thin crust forms at the bottom of the fondue pot. This is known as la religieuse (French for nun) and is utterly delicious!
