Gault&Millau Austria: the new gourmet guide has arrived, and it’s good news for the Jagdhof’s Hubertus Stube restaurant in Neustift in the Stubai Valley!

Two toques, three men and one command – that was the starting position before the Austrian edition of the 2018 Gault&Millau was published. First, we should mention that Head Chef Boris Meyer, Sous-Chef Martin Schneider and Alban Pfurtscheller, under whose direction the toques were originally awarded, have been battling bravely for the last few years.
‘You don’t just waltz into being awarded two toques,’ says Alban Pfurtscheller who knew he was leaving his parents’ kitchen in safe hands when he set off for Asia for the next chapter of his career. Boris Meyer and Martin Schneider were indeed able to stay on top by maintaining consistently high standards. Defending their two toques required the congenial duo to be inventive, producing unusual and exciting compositions that pleased their guests as well as the judges.
The tension was palpable in the days leading up to the publication of Gault&Millau 2018. Would they be able to hold on to their two toques? ‘Two Gault&Millau toques do represent quite an honour. We nevertheless keep striving for more. It’s important to keep improving.’ The trio are determined to rise to the challenge together – and to achieve an even better rating in the future. ‘We are doing our utmost to ensure that we keep on developing,’ is the unanimous decision of the Jagdhof cuisine team. ‘We get on like a house on fire, complement each other and we learn from each other. We keep pushing ourselves and one another to greater heights of achievement. And one day we might even get to three toques – one each!’ says Boris Meyer with a wink and a grin.
