4 toques, 17 | 20 points and a brilliant review for the Hubertusstube

Joy at the SPA-Hotel Jagdhof and the Hubertusstube: once again, we have been awarded 4 toques, 17 out of 20 points and a brilliant review in the Gault&Millau Restaurant Guide 2024. To top it off, we also have a great review in the Gault&Millau Hotel Guide 2024.

For the gastronomy industry, waiting for the Gault&Millau Restaurant Guide to be unveiled is like waiting for Christmas, the tension and excitement building for weeks. When the reviews are revealed, our eyes light up and the joy we feel is impossible to describe. And so it went this evening, 14 November, when the eagerly awaited results were announced: once again, the Gault&Millau Restaurant Guide 2024 has awarded us 4 toques and 17 out of 20 points, confirming our consistently high standing as one of Austria’s best fine dining restaurants. The cherry on top was our brilliant review in both the Restaurant Guide and the Gault&Millau Hotel Guide 2024!

Outstanding Team Performance

‘Our 4 toques and 17 points show real appreciation for the work we do each day. We are delighted that we have consistently thrilled the testers with our innovations, authenticity and quality’, says junior director Alban Pfurtscheller, beaming with joy at the review in Austria’s leading restaurant guide. ‘This rating shows that our team, led by Christian Jeske, does their best work every day. Congratulations to Christian Jeske, Albin Mayr and Karlheinz Jonak, and to every member of the kitchen, service and sommelier teams. They all play their part in giving our guests extraordinary experiences every day – not just for their palate, but for all their senses! We are incredibly proud of you!’

Motivation, Inspiration and a Top Team

Eyes ablaze with pride, Chef Christian Jeske also thanks the team: ‘I’m absolutely thrilled, as is the whole team – wonderful reviews like these go down like a fine olive oil,’ he smiles. ‘There’s no greater praise for our efforts to create something extraordinary than when our guests leave the table smiling. The fact that we also won over the discerning Gault&Millau testers is a huge tribute and motivates us even more,’ says Christian Jeske. ‘I’d like to thank my team in the kitchen, my colleagues Albin Mayr and Karlheinz Jonak, and the entire service and sommelier team. We can only perform at this level if we are perfectly attuned to one another and share the same goal: happy guests. There’s one person I’d particularly like to thank: our junior director Alban Pfurtscheller. Working with him is an additional source of inspiration as we enjoy the freedom to realise our full potential. Thank you!’

The Gault&Millau Reviews 2024

‘The family-run Jagdhof Neustift is a half-hour drive from Innsbruck. This five-star hotel is not only one of the best in the Stubai Valley, but also one of the most prestigious in the entire country. And with good reason: a luxurious spa, exquisite rooms and suites, and cosy Stuben create a first-class world of wellbeing. And what would the perfect venue be without culinary delights?! The Hubertusstube gourmet restaurant is the jewel in the crown of its extensive culinary offerings. With skill and finesse, Christian Jeske creates dishes that are superb and beautiful in equal measure. He welcomes us with six different amuse-gueules, and we have to hold ourselves back from eating too much of the bread (home-baked, of course) to save our appetite for what’s to come: we start with razor-thin slices of scallop with avocado, Oscietra caviar and hints of fruit from Granny Smith apples and elderberries – tastefully served in a crisp ring of potato. Equally tasty are the aromatic char with Chinese artichoke, bottarga and a refreshing beetroot sorbet. For the intermediate course, we enjoy a perfectly cooked langoustine, garnished with black garlic on Jerusalem artichoke and baby leek emulsion.

In the main course, the Danube salmon and black-feathered chicken allow the kitchen team to show just what they can do. The fish with a duo of cauliflower, citrus aromas and shiso is poetry on a plate, while the chicken with wild asparagus, purple salsify and malt is flawless. To finish, we select both the exquisite Valrhona chocolate creation and the cheese selection – a menu that leaves no wish unfulfilled and is paired with wonderful wines. The selection from the wine cellar, which boasts more than 1,000 different wines, proves that the extremely courteous sommelier is just as skilled as the chef.’

‘At the five-star Jagdhof hotel in the Stubai Valley, guests can look forward to an extra-special experience. In addition to the exceptional food and picturesque mountain backdrop, the hotel has a wellness area that is more than skin deep. Its 3000sqm contain 20 different sauna, bathing and relaxation areas. In the SPA CHALET, you can relax surrounded by aromatic mountain herbs. The Private SPA Suite offers 100sqm of premium luxury and privacy. You absolutely must treat yourself to one of the personalised treatments. The Hubertusstube fine dining restaurant takes care of your palate.’

Feeling of Homecoming

Director Armin Pfurtscheller is clearly proud of the hotel’s performance and its reviews in the restaurant and hotel guides: ‘The review is like something out of a fairytale: not just for our Hubertus team, who I thank and congratulate from the bottom of my heart, but for everyone who works at the hotel. They richly deserve the judges’ praise, which proves that our philosophy of excellent service and focusing solely on the needs of our guests makes a crucial difference. When guests travel to the SPA-Hotel Jagdhof, it should feel like coming home. This is our top priority, harnessing all our expertise, grown out of tradition and refined with creative innovation’, says Armin Pfurtscheller. ‘Martina and Karl Hohenlohe wrote in their foreword to the Gault&Millau Restaurant Guide 2024 that “Many people plan their holidays hoping to have their personal needs met in full. For example, they may not just be looking for a wellness holiday, but expect services to be personally tailored.” Since opening the SPA-Hotel Jagdhof, this is what we’ve been trying to do – in the hotel, the restaurant and in the spa. Reviews and awards of this calibre show that we’re on the right track.’

Gault&Millau

This year’s Austrian edition of the renowned Gault&Millau Restaurant Guide will be the 19th published by Martina and Karl Hohenlohe. The 2023 guide – the 45th edition overall – lists and praises the 876 best restaurants in Austria. The latest guide was unveiled on 14 November at the Hotel SO/Vienna with a particular surprise in store, awarding 5 toques to two restaurants: Andreas Döllerer (Restaurant Döllerer, Golling) and Juan Amador (Restaurant Amador, Vienna).

Gault&Millau was founded in 1969 by journalists Henri Gault and Christian Millau. Independent judges conduct anonymous reviews for the Gault&Millau Guide using the French school grading system of 0 to 20 points. The highest score of 20 is never awarded in Austria, because ‘perfection is God’s preserve and beyond the limitations of a human being’.
